Another Snow Day here in the Midwest! These Melting Snowmen cookies are fun to make and pair perfectly with a cup of hot cocoa. First, using your favorite sugar cookie recipe, roll the dough into 1" balls and flatten - they don't have to be perfect circles! (We use the bottom of a round glass dusted with flour so it doesn't stick to the dough.) While the cookies cool, mix up powdered sugar icing (1/2 cup of powdered sugar mixed with 3-4 TBSP of milk, and 1 tsp vanilla), and ice the cookies. Next, place large marshmallows on a plate and microwave for approx. 20-30 seconds to soften. Grease fingers to lift marshmallows off the plate, placing a marshmallow on each cookie. Decorate cookies with gel icing tubes in assorted colors to add eyes, nose and mouth, arms, buttons and a scarf. Happy Snow Day!
