Energy Bites!

My yoga instructor introduced me to these delicious little bites of fiber that are great for a mid-morning or afternoon snack.  There's no baking involved - just combine whatever ingredients you like from the list below, refrigerate for 30 min, then shape into balls.  A healthy snack to keep that metabolism burning throughout the day! 

Energy Bites

1 cup dry oats (I use old fashioned)
1/2 cup peanut butter
1/2 cup flaxseed
1/3 cup chopped nuts 
1/2 cup chocolate chips (I prefer dark or mini)
1/2 cup raisins or dried cranberries
2/3 cup coconut (I toast for a few minutes) 
1/3 cup honey - (I adjust so mixture isn't too dry or too sticky)
1 tsp vanilla
